chocolate bunnies
if you are looking to get chocolate bunnies–of the vegan variety–for easter, you are gonna have a hard time of it.
most online shops sold-out weeks ago. while i’m sure big-box chains will have plenty cadbury bunnies & eggs for all, it’s also quite possible that they will be filled with GMO sugars. not the healthiest way to celebrate the second coming.
what to do?
grab yourself some fair-trade, organic chocolate and one of these awesomely cute vintage reproduction molds (the dancing bunnies & fuzzy bunny are my favorites).
quick tips: if not using chips, make sure to chop the chocolate up into fine bits so they will melt uniformly.
if you’re gonna nuke it, be sure to go incrementally on the time & stir between jolts. you can burn it pretty easily going this route (any purist would scoff and demand a double-boiler).
allow thin coatings to set-up a bit before applying the next one. it doesn’t have to totally dry, but if you don’t wait, you’ll end up with a pooling of chocolate inside your bunny, instead of an even layering. if you get really fancy pants, you could alter white chocolate with dark, with milk chocolate.
it’s a great tradition to start–i think. i mean, it involves chocolate so it automatically scores big points. but it’s fun to make something for your honeybun instead of just buying it prepackaged off the shelf. get that paper shredder (it’s in your office, somewhere) and make some homemade easter grass out of all those lousy catalogs (that you’re still getting despite opting out) and freak up a cute bunny basket.
