tiramisu with roses & berries

i am a sucker for interesting food ingredients.
this time it was the rose flavored ladyfinger biscuits that did me in. exotic, intoxicating pink petals always fill my cheesiest of romantic fantasies–think far east desserts scented with rosewater. plus, boyfriend & i both love tiramisu, so i bought them impulsively knowing i would find some way to make a valentine treat with them.
i decided on a berry tiramisu with a vegan spin. i combined frozen strawberries (reduced down in a dessert wine) with a cashew cream recipe to mimic the marscapone.
i think i nailed it–as eric ate all in one sitting!
the cream is considerably rich–thank you coconut milk–so you only need a tiny serving to satisfy. the lovely pink ladyfingers were soaked in coconut milk & elderflower syrup.
just a bit of easy layering, 1–2–3,
